Fish Taco’s

Yum! Yum! I love summer and all the food that goes well with this sun filled season! If mexican food is up your alley then you have to try these baked fish taco’s …delicious!!! Oh, and let’s not forget the best part …healthy! Im hooked 🙂
You can use any fish that tickles your fancy but I chose tilapia its light and inexpensive. I bought 4 pieces of fish but depending on how large your dinner party you may want to go up or down in pieces. Take the 4 pieces of tilapia and cut into strips.
Next mix in a bowl
1c of panko crumbs
1c of crushed corn tortilla chips
1/2 tsp of salt
1/2 tsp of cumin

Next beat two egg whites in a bowl and dip each strip of fish in the egg white wash first then dip into the crumb mixture and lay on baking sheet sprayed really good with pam cooking spray.

Now bake at 375 degrees for 15min until golden brown or maybe longer depending on the thickness of your strips! and Wa-La ..your baked fish strips without the frying and grease!

To compliment the fish I made my own salsa to top it with! I mixed together in a bowl
1 mango
1 can of black beans rinse and drained
1 ear of yellow corn shaved off the cob
1 jalapeno diced
1/2 onion diced
1 tomato diced
1 avocado
1 squeezed lime
splash of orange juice

Not quite done yet! It may seem like a lot of work but it’s really not and I promise it’s so worth it!!
Now I made a remoulade sauce that just brings it all together! Mix in a bowl
2/3 cup mayonnaise
2 to 3 green onions finely chopped
2 tablespoons finely minced fresh parsley or cilantro
1 clove garlic, finely minced, optional
1 tablespoon fresh lemon juice
1 tablespoons dijon mustard
1/2 teaspoon salt
1/8 teaspoon black pepper
A few dashes of Tabasco or hot sauce, to taste
A few dashes or Worcestershire sauce
Wrap in corn tortilla that you rub well with olive oil and heat in microwave. Then dig into absolute deliciousness!!!
