Chicken Stuffed Peppers

Chicken stuffed bell peppers!!! My mouth salivates as I type because they are sooooooooo good! Oh, and easy!
How to make
Heat oven to 375ºF. Lightly coat a 13 x 9 x 2-inch baking pan with Pam. Cut tops off peppers. Remove and discard seeds and ribs. Place peppers in pan.
Ingredients
4 medium-sized green, red, yellow or orange bell peppers with flat bottoms
1 medium onion, peeled and diced
2 teaspoons minced garlic
1 package of ground chicken
1 cup cooked rice
1 can of diced seasoned tomatoes
1 cup mozzarella cheese
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
optional
1/2 can water chestnuts diced
1/2 jalapeno diced for spice
Heat a couple tablespoons of oil in medium skillet over medium-high heat. Add onion and garlic, cook until onions are translucent. Place mixture into medium bowl. Combine onion mixture with cooked chicken, rice, tomatoes, 1/2 cup cheese, salt and pepper. Divide mixture evenly into prepared peppers. Cover with aluminum foil.
Bake 40 to 50 minutes or until peppers are tender and filling is heated through. Remove from oven and remove foil. Top each pepper with remaining cheese. Place back in oven until cheese is melted and then DEVOUR!
