It’s avocado season and thank god I bought a bag of them the other day! Starving at home and no time to leave I opened the fridge to try and see if it was possible to create a lunch out of my random items. I see avocado, a bag of cooked chicken (southwestern flavor), and tomatoes …Pheeew! So, I decided to cut avocado and remove skin and pit, sauteed the cooked chicken until warm, dice the tomatoes, and add salt & pepper. BUT I still needed a dressing to top it with and the pantry holds the secret dressing! I always keep packets of Italian dressing & my glass shaker in pantry for moments like these. The good seasons Italian dressing is easy and taste wonderful! Mix vinegar, olive oil, water, and herb packet (shake) and drizzle on top! Sprinkle with chili cheese fritos for crunch if you wish…DELICIOUSNESSSSSS!
