Baked Egg Rolls

Melissa’s famous egg rolls and she shared the recipe! Well, not only shared she came over and prepared them from start to finish. So, NO screwing up the second go-round. πŸ™‚ They are super healthy and yummy in my tummy!
Spring Roll Shells (super thin from Japanese specialty store)
1 small bundle of Green Onions
1 package Mushrooms
1 package Bean Threads
1 bag shredded cole slaw
1 bag of broccoli slaw
1 Bundle of Asparagus
1 Rotisserie Chicken
Soy Sauce
Fresh ginger for the dipping sauces
Finely chop green onion and saute in pan. Add mushrooms (you can pre-dice or use spatula to finely chop while sauteing. Add whole bag of cole slaw to mushrooms & green onion and let cook. Allow to cook for 5 min or so then add the asparagus and continue to cook in pan for another 8-10 minutes. Take rotisserie chicken and scrape with fork so that the chicken is shredded and add chicken to the pan with the rest of ingredients and continue to cook 10-15 minutes (always stirring.) I didn’t have a big enough pan or wok so in a deep pot we had broccoli slaw cooking (always stirring.) Once the mixtures start to have a seared or brown look to the cabbage then I poured everything from the pan into the pot with the broccoli and added 2 big spoonfuls of peanut butter. Stir well and continue to cook on stovetop.
Boil your bean threads until soft, drain water, and stir in a little soy sauce. Then add bean threads to the rest of ingredients cooking in pot on stovetop. Once everything has cooked down and mixed really well you can start to roll into your wrappers. Keep a glass of water next to you to wet your fingertips. Place some of your mixture at corner of wrapper and roll up (tucking sides) then sealing it all together with a little water. Place on pan and spray really well with pam cooking spray. Put in 375 degree oven 8 minutes on one side and flip and another 8-10 minutes on the other side until golden brown. Then serve with your favorite dipping sauce. We made a ginger soy sauce and a mustard sauce to compliment the baked egg rolls!

  4. A little bit of curry paste in the mix and you could have a healthy samosa… maybe a yoghurt based dip for that though!
