Almond Joy Truffles

Almond Joys got nuts …Mounds don’t! You can make these truffles with or without almonds. Chocolate and coconut lovers these are ahhhhh-mazing! They are also pretty sweet so they will cure a sweet craving if your having one.
Ingredients
Chocolate
3 Cups of Shredded Coconut
1/2 Cup of Condensed Milk
1/2 Cup of Powdered Sugar
In a mixing bowl stir together the coconut, condensed milk, and powdered sugar. Roll into balls and lay to side. Next, take almonds and stick into the middle of the coconut ball and roll in hand to shape into a round ball and hide the almond. Melt chocolate and dip the truffle in the chocolate and place on wax paper to harden. That’s it folks! You now have yourself an almond joy truffle …look out godiva! 😉

Energy Bites

No Bake Energy Bites! I was introduced to these energy balls of goodness through Pinteret and I’m addicted! 🙂 Not only are they easy to make but they are healthy too, gotta love that.
Ingredients
1 cup of dry oatmeal
2/3 cup of sweetened or toasted coconut flake
1/2 cup of peanut butter (I used homemade peanut butter/ I made in a previous post or you can substitute almond butter)
1/2 cup ground flaxseed
1/2 cup of chocolate chips (optional or you can substitute dry fruit)
1/3 cup of honey (caution to using agave, honey keeps the balls together)
1 tsp of vanilla
Stir all the ingredients together in a bowl. Let chill in the refrigerator for 30 minutes. Once, chilled roll into balls and store in an air tight container. It’s a guiltless treat that will fix any sugar cravings you may have. Enjoy!

Coconut Water vs. Coconut Oil

Ok, so I hear all these wonderful benefits to drinking Coconut Water so I figured what the hell, maybe I should try it since everyone else is, right? No, I’m not a follower but I do like to try and remain as healthy as possible minus the occasional cocktail. 😉 Apparently, the benefits are as follows:
Coconut water is basically the clear liquid which comes from unripe coconuts. One of the benefits of coconut water is that it is a healthy electrolyte drink as it contains calcium, magnesium, and potassium, the water also low in calories and fat and contains no cholesterol. Research has found that consuming coconut water on a regular basis can improve immunity, increase your metabolism, change HDL as well as detoxify your body.
Well, I tried the brand below and it was HORRIBLE! Holly warned me that it taste bad (should of listened). I don’t know if its an indication that ALL coconut water taste yuck but I just can’t force myself to buy anymore. After, speaking with my girlfriend she recommended trying Coconut Oil… I will have to report back on the flavor there but hopefully its better or I will get the benefits another way! It does seem the Coconut Oil may have more benefits vs. the water. Benefits are as follows:
The health benefits of coconut oil include hair care, skin care, stress relief, maintaining cholesterol levels, weight loss, increased immunity, proper digestion and metabolism, relief from kidney problems, heart disease, high blood pressure, diabetes, HIV and cancer, dental care, and bone strength.

We shall see the difference…:)
