Chocolate & Peanut Butter Bananas

I might be part monkey considering all the bananas I eat! Here’s a cute interesting twist on chocolate and bananas. Cut the end of the banana off so they will stand up. Take a knife and cute a round hole in the top of the banana. I took a chop stick and hollowed the banana even more after I made the hole in the top. Place chopped nuts in a bowl. I made a homemade piping bag with a ziploc bag. I bought a set of piping tips to decorate with for $2 at the supermarket. I snipped one corner of the ziploc bag, placed the tip through the hole of the bag, and fill with peanut butter (so I could pipe into the top of each banana). Lay a piece of wax paper on counter top and melt chocolate and set to the side. Dip the banana in the chocolate, sprinkle with nuts, and stand on wax paper to dry. Then fill with peanut butter with your piping bag. I initially filled with peanut butter before dipping in chocolate but I recommend filling it last. 🙂

Chicken Stir Fry

Healthy Chicken Stir Fry! You can make in a wok or in a large pan…
Ingredients
Green Onion
1 small package of Mushrooms
1 bag of Broccoli Slaw
1 bag of Cabbage
1 small package or bundle of Asparagus
Rotisserie Chicken
Peanut Butter
Soy Sauce
In wok saute green onions for few minutes in a little olive oil. Add diced mushrooms and saute for few more minutes. Add cabbage cook for a few minutes. Add asparagus and cook for a few minutes. Add broccoli slaw, shredded rotisserie chicken, a few splashes of soy sauce and cook for 10 to 15 minutes until everything has cooked together to desired texture. Then add two large scoops of peanut butter cook a few more minutes and ENJOY! 😉

Energy Bites

No Bake Energy Bites! I was introduced to these energy balls of goodness through Pinteret and I’m addicted! 🙂 Not only are they easy to make but they are healthy too, gotta love that.
Ingredients
1 cup of dry oatmeal
2/3 cup of sweetened or toasted coconut flake
1/2 cup of peanut butter (I used homemade peanut butter/ I made in a previous post or you can substitute almond butter)
1/2 cup ground flaxseed
1/2 cup of chocolate chips (optional or you can substitute dry fruit)
1/3 cup of honey (caution to using agave, honey keeps the balls together)
1 tsp of vanilla
Stir all the ingredients together in a bowl. Let chill in the refrigerator for 30 minutes. Once, chilled roll into balls and store in an air tight container. It’s a guiltless treat that will fix any sugar cravings you may have. Enjoy!

Peanut Butter Apples

I have a sweet tooth like nobody’s business so I try to find guiltless sweets as often as possible to munch on and who doesn’t love apples or peanut butter? Take a red delicious or a granny smith apple and cut on side into round slices. Then put peanut butter of your choice in between the slices, add a little granola if its in the pantry, and sprinkle with a few chocolate morsels. It’s healthy, taste delicious, and its a cute snack!
